Holidays always seem like the perfect moment to indulge in a few treats. Thankfully my husband is so thoughtful and gave me some chocolate of the 70-86% variety, so I don’t feel guilty nibbling on it, and I can use it in baking!
I was very proud of myself this week for paleofying a recipe and loving it! I found this chocolate pudding recipe on one of the blogs I read this week, and immediately was in the mood for a little pudding. After looking over the ingredients it didn’t seem too hard to make it paleoish.
3 cups of canned full fat coconut milk instead of milkz
1/3 cup of maple syrup (grade b) instead of sugar
2 tbsp of tapioca powder instead of cornstarch (if I could find it I would have used arrowroot powder, but alas my health food store didn’t have it)
For all other ingredients I followed the recipe, even the same cooking techniques. It turned out quite perfectly, and a little dish of this has been the perfect thing to pack in my lunch so that I don’t mind all the Valentine’s candy flying about.
The second treat of the week came about Valentine’s morning when I woke up with thoughts of Belgian waffles in my head. I checked Against All Grain–one of my very favorite paleo blogs–and what do you know, there it was. I didn’t have macadamia nuts on hand, so I substituted almond flour, but I’d love to make them again once I have macadamias. I also did not make the fruit syrup since I was a little short on time, it being a weekday, but I’d like to try it next time.
